rice pancakesGrowing up, my family often ate pancakes: regular, corn, rice and potato. And yes, we put syrup on them!! (However, my mom liked them with butter and salt.) I now make rice pancakes for my sons, and they love them.

Some of my Japanese students also know about (Japanese-style) rice pancakes, but most of my students do not know. So if you are interested, here is the recipe for my American-style rice pancakes.

Rice Pancakes ライスパンケーキ

Heat a skillet to medium. (Amounts are varied depending on how much rice you have!)

1 – 2 cups cooked rice (leftover rice works great)
炊いたお米(残ったお米が良い)1 – 2 カップ

1/8 – 1/4 cup butter バター 1/8 – 1/4カップ

1 egg 卵 1個

1/4 – 1/2 cup flour 小麦粉 1/4 – 1/2カップ

1/3 – 2/3 cup milk (or until easy to form into a pancake shape)
ミルク 1/3 – 2/3 カップ(もしくは、パンケーキの形が作りやすくなるまでの量)

Mix the rice, butter and egg. Add and mix in the flour. Add in enough milk that it is easy to spoon out and shape, but is not too watery. (It’s difficult to make a mistake – I mix different amounts each time, and sometimes I don’t have an egg or butter. It’s ok! If I don’t have milk, I use water. Ok!)
