muffinAmericans love muffins! You can find them in any coffee shop, supermarket or even gas station. However, those muffins are often full of sugar and fat. Here is a simpler recipe that Americans use at home that is much healthier and just as yummy. Our house favorite is banana -mini chocolate chip.

Simple Muffins シンプルマフィン

Preheat oven to 400°

Grease or use cupcake liners in 12 muffin tins.

Wet ingredients: 1 or 2 eggs, 1 c milk, ¼ c melted butter.
Dry ingredients: 2 c flour, 1 T baking powder, ½ t salt, 2 T sugar.

Mix wet ingredients together in medium bowl.  Sift dry ingredients into bowl, stir and mix.

Divide batter over 12 muffin tins. Bake about 15 minutes.

Note: Add a mashed banana, ½ c diced apples, ¾ c blueberries, other fruit as desired.  Other options are chopped walnuts or chocolate chips.
